PORK BELLY LETTUCE WRAPS
Roasted Pork Belly Lettuce Wrap, Carrot Kimchi, Bib Lettuce

16 slices Roasted Pork belly
2 oz Carrot Kimchi
16 bib lettuce cups
3 Tbsp. Sweet soy
3 Tbsp. Spicy Asian mayonnaise
2 Tbsp. Toasted black and white sesame seeds
Shaved Radishes
Cilantro sprigs
Place pork onto resting rack with sheet pan underneath. Drizzle mayonnaise and then drizzle sweet soy. Brulee under broiler or with blowtorch. Sprinkle sesame seeds and garnish with cilantro.
ASIAN MAYONNAISE
3 egg yolks
2 oz rice vinegar
3 tbsp Salsa Fuerte®
2 tbsp sweet soy
1 cup vegetable oil
1 cup sesame oil
In blender, add yolks, vinegar, Salsa Fuerte, sweet soy. On medium speed slowly drizzle vegetable oil and sesame oil until emulsified and incorporated.
CARROT KIMCHEE
4 cups Carrots, grated
2 tbsp. Salt
Paste:
3-4 stalks Green onion
¼ cup Garlic
1 tbsp Sugar
1/3 cup Hot pepper flakes
2 tbsp Mince ginger
Make paste with above recipe. Mix with julienne carrots.
Season with salt
Refrigerate 2 days to marinate.
